Avocados, Scallion, Garlic, Tomatoes, Lime Juice, Salt, Jalapeños (if you like it spicy)

DARA TORRES' CORN CASSEROLE
* Chop ingredients: Pulse cranberries and jalapeño in a food processor until coarsely or finely chopped (your choice) *Mix: Transfer to a bowl and stir in sugar. Add in cilantro, green onions, salt, and juices; stir to combine. *Chill: Cover with plastic wrap and refrigerate for at least 1 hour or overnight - the longer the better! *Serve: Drain the mixture. Serve over a block of cream cheese, with crackers.
KATIE WITHAM'S CRANBERRY CRACKLE DIP
12 oz Cranberries, 1 jalapeño (seeds removed), 1/2 c sugar. 1/3 c cilantro (chopped), 3 green onions (finely sliced), 1 TBL lime juice, 1 TBL orange juice, Pinch of salt, 1 block cream cheese

*1/2 c grated parmesan cheese, divided, 1 c frozen spinach - thawed, drained & coarsely chopped, 1 14 oz can artichoke hearts - drained & coarsely chopped, 4 oz cream cheese (room temp), 1/2 c sour cream, 1/4 c mayo, 1 clove garlic, grated, 1/4 c shredded mozzarella cheese, 4-5 dashes of hot sauce (optional)
